STEM stands for science, technology, engineering and maths - and a dedicated facility has been in the pipeline for several years.
Raising the matter in the Dáil, Sean Canney said many students at the Dublin Road campus are still being taught in classrooms built 50 years ago.
Speaking in response, Minister Simon Harris said he understands the frustration, but the project hasn't been standing still.
