Galway Bay fm newsroom - Approval has been given for plans to convert the former Griffins Bakery on Shop Street.
The iconic four-story property is set to be turned into a mix of accommodation and a food outlet.
The project is led by Jessed Limited.
Griffin's closed its doors in 2019 after more than 130 years in operation - and went on the market for €1.6m.
The new owners have now been given the green light for a significant transformation of the premises at 21 Shop Street.
The first, second and third floor are to have existing bakery equipment removed, to make way for residential accommodation.
Meanwhile, the ground floor bakery is to become a food outlet with internal alterations, as well as indoor and outdoor seating.
